Strawberry Almond Baked Oatmeal

Summer means it’s strawberry season! Fresh strawberries are everywhere, from farmer’s markets to NYC food carts selling them as a snack. 

I simply couldn’t resist buying a big batch of fresh strawberries and bringing them home.

 

With a big batch of strawberries at hand, I thought why not make a nice big batch of breakfast that I can eat all week? Baked oatmeal seemed like a reasonable choice.

Although I’ve been meal prepping recently for the entire week, I haven’t meal prepped my breakfasts at all. So, I’ve decided to meal prep my breakfast using these irresistible strawberries and see how it goes.

This Strawberry Almond Baked Oatmeal is very filling and is guaranteed to keep you full until lunchtime. The week I made this, I was getting up at 5 am and had one baked oatmeal square for breakfast at around 5.30 am. I did not feel hungry until about 11.30am/12.00pm.

This breakfast is also excellent to pack for work or school. It fits into a small container and it’s mess free if you choose not to add any extra messy toppings 😉

Strawberry Almond Baked Oatmeal
 

Strawberries are the main ingredient in this baked oatmeal. Yet, our recipe wouldn’t be complete without adding delicious slivered almonds for that decadent crunch.

When baked, strawberries get soft and release their awesome juices. The balance of strawberries’ sweetness and acidity is a perfect addition to almonds. The almonds add smooth and delicate flavor as well as a subtle crunch.

Making this baked oatmeal didn’t take much time and it supplied me with breakfast for five days (plus some more). It was just me eating it all week. If you’re making it for the whole family, you can always double the recipe and use a bigger baking dish.

Are you looking for a healthy and tasty breakfast that requires zero prep time in the morning? This Strawberry Almond Baked Oatmeal is the perfect breakfast meal prep idea – make it once and enjoy all week.

Ingredients
  • 2 cups oats
  • 1/3 cup slivered almonds
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • ¼ tsp sea salt
  • 1 ¾ cup nut milk of choice: almond, rice, soy
  • 1/3 cup agave
  • 2 flax eggs
  • 3 tbsp melted coconut oil
  • 2 tsp vanilla extract
  • 1 pint fresh strawberries chopped
  • Optional: 1 tbsp coconut sugar
  • Optional toppings when serving: nut milk dairy-free yoghurt, additional fresh fruit, or extra agave.
Instructions
  1. Preheat oven to 375 F degrees.
  2. Combine all the dry ingredients in one bowl: oats, almonds, cinnamon, baking powder and sea salt. Mix with a whisk. Set aside.
  3. In the second bowl, mix all wet ingredients: nut milk, agave, flax eggs, coconut oil and vanilla extract.
  4. In a 8×8 baking pan, start by layering half of strawberries at the bottom.
  5. Add all dry ingredient mixture on top and flatten.
  6. Add wet ingredient mixture and wiggle the pan a bit make sure the wet mixture penetrates through the oats to the bottom of the pan.
  7. Add remaining strawberries on top.

  8. Optional: sprinkle coconut sugar on top. 

  9. Bake for 45 mins.
  10. Serve either warm or cold, with or without the suggested toppings.
