It’s all about that garlic baby. I love love love garlic. I can even eat it raw by itself…I like to simply eat a whole clove (not chopped up) with a salad or a meal.

Now, we are NOT going to go this extreme. We’re going to roast our garlic and then add it to our cauliflower mash.
In addition to being a low-carb alternative to mashed potatoes, it’s also another serving of vegetables. Even kids love it because it’s all about perception.

For this recipe, I omitted oil all together. You really don’t need it. You can roast your garlic real quick in a non-stick pan for about one minute. This will caramelize it and you won’t have to add any oil. If you’re nervous about roasting something without any oil, then add a little bit of water.
This recipe will result in a creamy and dreamy Roasted Garlic Cauliflower Mash that even your non-vegan friends will love.

- 1 medium cauliflower head
- 2 cloves garlic
- 1.5 tbsp nutritional yeast
- 1 tsp oregano
- ¼ tsp salt
- 1/8 tsp pepper
- 3 tbsp plant milk

Steam cauliflower florets until soft, about 15 minutes. Let cool for 5 minutes.

While cauliflower is steaming, caramelize garlic. Heat a small non-stick pan over medium heat. Chop garlic and cook in a pan for 1 minute, stirring continuously. If the garlic is sticking to the pan, add 1 tsp of water. Set aside.

In a high-speed blender or food processor, combine steamed cauliflower, roasted garlic, and the rest of the ingredients. Blend until well combined. If the mixture is a bit dry, add additional tbsp of plant milk.
