I’m such a sucker for overnight oats.
Sometimes when I’m feeling lazy, I just throw together whatever ingredients together I have on hand in a jar and call it a day.

Then, after having the same “random” overnight oats for days, I get bored and immediately start making a pie inspired version.
Is that weird?
Pumpkin Pie Overnight Oats is the perfect breakfast with a half-used can of pumpkin puree sitting in the fridge.
I hate wasting food, so let’s put that pumpkin puree to use, shall we?
If you’re feeling extra fancy, you can make your own pumpkin puree from scratch – it isn’t all that hard!

A few tips on how to make a better batch of overnight oats:
- Always use a 1:1 ratio of oats to nut milk. Keeps it creamy.
- Don’t forget to stir before putting in the fridge and right before eating.
- If you’re adding nuts or berries add them when you’re about to eat your OOs.
- Don’t use instant oats or steel-cut oats. Instant is too thin whereas steel-cut is too thick.
- If you don’t have any plant milk on hand, use water but make sure to either add a banana or a tablespoon or two of non-dairy yogurt.
If you want to add some crunch, you can top the Pumpkin Pie Overnight Oats with pecans (yum!), coconut flakes, or Pumpkin Spice Granola.

Healthy Pumpkin Pie Overnight Oats recipe in a jar. It’s a balanced breakfast that is full of fall pumpkin flavor to keep you full for hours!
- ½ cup oats
- 1 tsp chia seeds
- 1 tsp flax seeds or flax meal
- 1 tsp pumpkin spice
- ¼ cup pumpkin puree
- 1 tsp agave or maple syrup
- ½ cup nut milk

Mix all ingredients in a glass jar and leave in the fridge overnight or at least for 4 hours.

Optional: top with your favorite ingredients when ready to eat such as pecans, granola, chocolate chips, or coconut chips.
