Pecan Pie Overnight Oats is easier than you think to make. I don’t know about you but when I think about making a pie, it always seems so tedious. Lots of dishes to dirty, lots of mixing, making the crust, then an hour of baking.

So, I don’t want the word pie in this recipe to make you think that this recipe takes a lot of time to make. Making this OO only takes 10 mins. The rest is just passive waiting for everything to set in the fridge.

I usually like to mix all the ingredients right before going to bed and then leave the jar in the fridge overnight. This way you have your breakfast ready to eat in the morning.

I also like to make more than one serving at a time so that I don’t have to worry about making breakfast for a couple of days. So easy…

Ingredients
  • ½ cup oats
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • 1 tbsp almond butter
  • 1 tsp coconut sugar
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • ½ cup unflavored nut milk
  • 1 tbsp chopped pecans
Instructions
  1. Combine all ingredients except for pecans in a glass jar and stir well. Leave in the fridge for at least 4 hours or overnight.
  2. Add chopped pecans right before serving.
