Easy vegan sandwich recipe with only 3 ingredients! The rich texture of grilled mushrooms, combined with nutty taste of pesto makes a perfect satisfying lunch!

Mushroom & Hemp Seed Pesto Sandwich

This sandwich is the perfect recipe in which you can use the Hemp Seed Pesto we made last week.

I find that mushrooms pair so well with pesto, be that tossed in a pasta dish or in a sandwich.

The recipe for this sandwich is super duper simple – only 3 ingredients!

First, we’ll start off by grilling mushrooms which should only take about 5 minutes. You can use any mushrooms you’d like. I used cremini mushrooms in this recipe and my sandwich was delish!

You can also use portobello or shiitake mushrooms in place of cremini. The taste will be slightly different, but that is the beauty of this recipe!

You can make it just the way you want it by simply swapping types of mushrooms!

P.S. you don’t need to use any oil to cook the mushrooms if you’re using a non-stick pan. Mushrooms cook pretty quickly and they shouldn’t burn in 5 minutes.

If you need to add some moisture to prevent from sticking you can simply add a tablespoon of water while the mushrooms are cooking.

The second ingredient in our Mushroom & Hemp Seed Pesto Sandwich is, of course, the hemp seed pesto! If you have not made the pesto yet– here’s the recipe.

I love hemp seeds very much and lately, I have been incorporating them in different recipes. Hemp seeds make an excellent base for pesto because of their nutty taste. They also have some texture. They aren’t quite as crunchy as nuts but that doesn’t take away from the taste of the pesto one bit.

Our third ingredient is kale. You can also sub for spinach, arugula, or mixed greens. They all work in this recipe.

We’re just trying to add something fresh and nutritious to complete our sandwich. #yums

As for the bread, I’ve been eating Ezekiel bread lately. You can use your favorite whole grain or whole wheat bread as well.

Ingredients
  • ½ cup mushrooms sliced
  • ½ cup spinach, kale, mixed greens, or arugula
  • 1 tbsp hemp seed pesto
  • 2 slices of bread: Ezekiel, whole grain, or whole wheat
Instructions
  1. Cook mushrooms on a grill pan or a non-stick pan over medium heat for about 5 minutes.
  2. While mushrooms are cooking, toast the bread.
  3. Start assembling the sandwich by spreading hemp seed pesto on both slices of bread. Add mushrooms, then greens. Season with salt and pepper if desired. Cut sandwich in half.
