Broccoli is not one of my default veggies. In fact, I HATED broccoli until recently. I still hate it depending on how it’s made. I hate it raw. Can’t stand it. And I hate it steamed or boiled.
Roasted broccoli though – love love love! It’s amazing how a different cooking technique can transform everything I know about this vegetable.

Lemon juice! I tested this recipe a couple of times, once with olive oil + lemon juice and then with just lemon juice. Removing olive oil does not impact the end result all that much.
Yes, with olive oil you will get crispier texture, but if you’re oil-free, then lemon juice is perfect! Since we’re roasting broccoli at such a high temperature for a short amount of time – it will get crispy. Promise, promise.
Lemon juice and garlic combination is such a classic. Plus both of them have antioxidant properties. Garlic adds a sweet and nutty flavor to broccoli when roasted. Lemon juice neutralizes garlic’s strong flavor covering the dish with a layer of citrus freshness.
Once you make it, I think it will become your new staple veggie side dish recipe. It’s just that good!

- 1 medium bunch broccoli
- 2 cloves garlic, chopped or crushed
- juice of 1 lemon
- salt and pepper

Preheat oven to 400 F/ 200 C.

Divide broccoli into individual florets, slicing thicker stems. Rinse under cold water. Place in a medium bowl.

Combine broccoli florets with garlic. Toss in lemon juice, salt and pepper.

Place on a baking sheet and bake for 20-30 minutes, until soft. Please check at 20 minutes to see if done. Do not let burn.

Let cool before serving.

You certainly can! The only thing is that it may not turn out to be as crispy. Stove temperature is lower than the oven hence the end result may be less crispy. But if you don’t care about crispy, then go for it!
