These pancakes are packed with winter spices such as ginger, nutmeg, and cinnamon. Cooking them really makes your house smell like a gingerbread factory (not sure if that’s even a thing!).

These Gingerbread Pancakes are soft, moist, and fluffy. And, just like all other recipes on this blog, they are healthy and delicious.

Many gingerbread recipes use molasses as the sugar source. To make these pancakes healthy, we won’t be adding molasses into our batter.

Even though molasses is slightly less bad for you than regular sugar, it’s still very high in sugar content. But don’t worry! We will be subbing molasses for coconut sugar to add a healthy sweet touch and a decadent caramel flavor.

Tip: Make your own Gingerbread Spice mix to cut down the prep time. I always have a homemade Gingerbread Spice mix in my pantry that I used for this recipe. It’s also much cheaper than buying the spice mix at the store.

If you don’t want to make the spice mix separately, don’t worry, I’ve included the list of spices to add to the batter.

This is the best homemade Gingerbread Pancake recipe! Made from scratch with simple ingredients – it will make your winter mornings oh so jolly!

Ingredients
Pancake batter:
  • 1/2 cup spelt flour
  • 1/2 tbsp baking powder
  • 2 tbsp coconut sugar
  • 1/8 tsp sea salt
  • 1/3 cup non-dairy yogurt
  • 1/4 cup non-dairy milk
  • 1/2 tsp vanilla extract
Ginger Spice Mix:
  • 1/2 tsp cinnamon
  • 1/8 tsp all spice
  • 1/2 tsp ginger
  • 1/8 tsp nutmeg
  • 1/8 tsp cloves
Instructions
  1. Mix all the ingredients together in one bowl.
  2. Heat up one large pan on medium heat and pour ¼ cup of batter to make one pancake. I suggest using a large pan to cook pancakes all at once to save time.
  3. Optional: agave or maple syrup.
