It is a game changer.

It makes a great recipe better. It makes a disaster dish a star. That’s why I love it. 😊

Grilled Smoky Eggplant

This Grilled Eggplant recipe is not a disaster recipe, I swear. I’ve just decided to marry my two obsessions into one mind-blowing concoction.

Curious what smoked paprika is and how it can be useful in vegan dishes? I’ve done some googling around to save you some time:

  • Smoked Paprika is made from smoking Spanish Pimenton peppers.
  • Smoked Paprika is different from Sweet Paprika which is made from Hungarian chilis.
  • Since it’s been smoked with natural woods, it has a distinct powerful smoky flavor.
  • It’s a great spice if you’re craving anything BBQ. Rub this spice all over that Cauliflower and roast it. You won’t be able to tell the difference.
  • Smoked Paprika doesn’t mean spicy. Most are not spicy at all. There are some varieties that are hot – the label will clearly state that.
  • Did I mention how awesome it is on an avocado toast?

Eggplants are available year-around and any time you feel like you don’t know what to make for a side vegetable dish – simply grab some eggplants!

Grilled Smoky Eggplant

This recipe is super simple and all you have to do is to wash the eggplants, cut them in circles, add a little olive oil (or oil of choice) and slather with smoked paprika. Pop in the oven and then devour.

If you’re into making buddha bowls, they will be great as an added vegetable. These Grilled Smoky Eggplants are also amazing in a sandwich.

This Grilled Smoky Eggplant is the answer to your summer BBQ craving. Add unique smokiness and incredible intensity to your everyday eggplant with a wonderful smoky spice.

Ingredients
  • 2 large eggplants (or 2 medium)
  • 1 tbsp olive oil
  • 1 tbsp smoked paprika
Instructions
  1. Preheat oven to 350F.
  2. Wash eggplants and cut into circles.
  3. Toss in a olive oil and sprinkle with smoked paprika.

  4. Arrange on a baking sheet and bake for 30 mins.
