Cooking Method
Now, there’re many ways you can cook green beans: boil, sauté, or bake. In the recipe today, we will be boiling them.
But don’t worry! You won’t be left with mushy, pale green beans from every kid’s dreaded meal. I will teach you a secret cooking method to make green beans crispy fresh and bring green every time 😊
First, you must trim the beans. I love using my kitchen shears for this. Kitchen shears are my go-to for saving time in the kitchen. You can also use a knife to do this.
After you’ve trimmed the green beans wash them thoroughly.
Add green beans to salted boiling water and cook for 3 minutes. Use a large pot with 8 cups of water. The ratio of water to beans should be 4 cups of water to 1 cup of green beans.
Also, make sure you salt the water with regular table salt. Add at least 3 tbsp of salt. It may sound like a lot but it isn’t! We’re using a lot of water here.
Third step is to drain the beans and transfer them quickly to the ice bath and leave them for 5 minutes. Iced bath stops the cooking process (hello, crisp beans!) and will bring out the bright green color of the beans.
The Sauce
My hubby created this easy sauce for green beans. The two key ingredients are garlic and Dijon mustard. Plus, oil and water. And that’s it!
Green beans with Dijon mustard sauce is my favorite way to make green beans for the holidays or otherwise. The bold and acid flavor of Dijon goes very well with the mildly sweet flavor of green beans.
Here’re some meal ideas to compliment the Garlic Dijon green beans:

- 2 cups green beans
- 6 cups of water
- 4 tbsp table salt
- Dijon Mustard Sauce:
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp water
- 1 garlic clove, finely minced

In a large pot, bring 6 cups of salted water to a boil. Separately, combine 1 cup of ice and 3 cups of water in a large bowl or pot and set aside.

Trim the ends of beans (the skinny, tapered ends) with kitchen shears or a knife. Wash the beans thoroughly.

Add green beans to boiling water and cook uncovered for 3 minutes. Drain beans and immediately transfer them to the ice water bowl and leave for 5 minutes. The ice bath helps stop the cooking process.

In the meantime, prepare the sauce. In a small bowl, mix Dijon mustard, olive oil, water, and minced garlic.

Drain beans and toss in Dijon mustard sauce.

Keep in the fridge in an airtight container for up 3 days.
