I LOVE make-ahead breakfast recipes! Why are they so great? First, they save so much time! You make the recipe once and you won’t have to worry about making breakfast for an entire week. It feels great to wake up and not cook anything.

The second reason is that it ensures you eat healthy. Since you have nice and tasty breakfast ready to be eaten, you won’t be tempted to grab a muffin from a coffee shop on your way to work.

Aaaand, it makes me feel that I’m in control of my time. I don’t feel rushed to make breakfast as I’m running late to work. It’s great!

This make-ahead breakfast is a yummy, healthy, antioxidant-rich Coconut Berry Baked Oatmeal. It’s so tasty and juicy that you won’t get bored of having it every week, I promise!

As I was looking at some of my breakfast recipes on the blog, I saw my Strawberry Baked Oatmeal that I made a few months back. I decided this time I’ll add mixed berries and add some coconut!

Meal prep the smart way! Check out my FREE guide How To Meal Prep Without A Recipe.

Coconut and berries play so well together. Coconut adds a subtle sweetness and dreamy tropical vibes. Mixed berries such as blackberries, blueberries, raspberries, and strawberries add bursting juicy flavor, freshness, and loads of anti-oxidants. I used frozen berries because they are not in season where I live. If you have fresh berries, they will work just as well.

I like to warm my baked oatmeal in a microwave when I’m ready to eat it in the morning. Then I add about two tablespoons of nut milk. You can also top it with more seeds and nuts or nut butters like almond or cashew. I personally do not get bored with having this Coconut Berry Mixed Oatmeal every day but if you find that you need to jazz it up, add more toppings.

The baked oatmeal is also great for when you have company for breakfast or if you have a larger family. It’s a fairly easy preparation and most of the time is spent on the oatmeal baking in the oven.

Okay, enough talk, let’s get to the recipe!
