This make-ahead breakfast is a yummy, healthy, antioxidant-rich Coconut Berry Baked Oatmeal. It’s so tasty and juicy that you won’t get bored of having it every week, I promise!
As I was looking at some of my breakfast recipes on the blog, I saw my Strawberry Baked Oatmeal that I made a few months back. I decided this time I’ll add mixed berries and add some coconut!

Coconut and berries play so well together. Coconut adds a subtle sweetness and dreamy tropical vibes. Mixed berries such as blackberries, blueberries, raspberries, and strawberries add bursting juicy flavor, freshness, and loads of anti-oxidants. I used frozen berries because they are not in season where I live. If you have fresh berries, they will work just as well.
I like to warm my baked oatmeal in a microwave when I’m ready to eat it in the morning. Then I add about two tablespoons of nut milk. You can also top it with more seeds and nuts or nut butters like almond or cashew. I personally do not get bored with having this Coconut Berry Mixed Oatmeal every day but if you find that you need to jazz it up, add more toppings.

The baked oatmeal is also great for when you have company for breakfast or if you have a larger family. It’s a fairly easy preparation and most of the time is spent on the oatmeal baking in the oven.

Healthy Coconut Berry Baked Oatmeal that is perfect as a make-ahead morning breakfast recipe! It’s easy to make and will guarantee you never go hungry.
- 2 cups of oats
- 1/2 cup coconut flakes + ¼ cup extra for topping
- 1 tbsp ground cinnamon
- 1 tsp baking powder
- ¼ tsp sea salt
- 1 ¾ cup nut milk of choice (almond, rice, soy)
- 1/3 cup agave
- 2 flax eggs 2 tbsp of ground flax seeds + 5 tbsp water, let sit for 10 minutes
- 3 tbsp melted coconut oil
- 2 tsp vanilla extract
- 2 cups mixed berries
- Optional toppings when serving: nut milk, dairy-free yoghurt, additional fresh fruit, or extra agave.

Preheat oven to 375 F degrees.

Combine all the dry ingredients in one bowl: oats, almonds, cinnamon, baking powder and sea salt. Then add wet ingredients and mix well.

In a 8×8 baking pan, start by layering half of berries at the bottom.

Add all half of oat mixture on top and flatten.

Layer the rest of the berries and top with oat mixture. Flaten the top.

Add a few more berries on top for decoration. Then sprinkle with coconut flakes.

Bake for 45 mins.

Serve either warm or cold with suggested toppings.
