I started this blog a few months after I went vegan in September 2017. I started cooking at home a lot more than I used to before. As I was going through my cooking journey, I found it very hard to find healthy vegan recipes that weren’t a smoothie bowl or a chia pudding.
Don’t get me wrong, smoothie bowls are amazing to eat and are super healthy. But let’s be honest, you can’t just survive on smoothie bowls alone. Sometimes, you want some mouthwatering meatless meatballs or a spoonful of decadent chocolate mousse.
This blog is a place where you can be sure to find recipes that are vegan, healthy and simple to make.
Foodie Life
I love to cook and experiment in the kitchen. I love playing with the ingredients and digging deeper to understand why some things taste so good while others don’t.
In my mind, there are two aspects of cooking. First aspect is the practical one where you must get messy and dirty in the kitchen and play (endlessly!) with the ingredients.
The second aspect is the science behind food. I want to understand how flavors play together and why our taste buds love certain flavors more than others. It’s about getting down to the molecular level and deciphering how little pieces come together to create a delicious meal.
Vegan Life
I went vegan cold tofurkey in September 2017. There wasn’t a certain event or a thing that triggered me going vegan. It was rather an accumulation of things that I was exposed to that lead up to that point.
I became exposed to a lot of film documentaries and books that taught me about inhumane treatment of animals which made me very sad. I learned about our society’s environmental footprint and what I could do to be kinder to our Planet Earth. I’ve also learned about the harmful effects of eating meat that expedites the aging process and causes many illnesses. So, I decided to change my life for the better and become a vegan for the animals, the environment and my own body.
Currently, my vegan lifestyle (I don’t like calling it a diet!) includes mostly whole foods. I do not eat a lot of processed foods such as prepackage veggie burgers or chocolate pudding bought in stores. I love making my meals from scratch and actually seeing what I put into my body.
Fit Life
If you haven’t guessed from the name of the blog yet, I LOVE keeping fit. I work out almost every day (yoga counts as a workout too!).
I simply love the way exercise makes me feel. It makes me feel happy. This is the only reason why I work out. It’s my “me time”. It’s the only time during the day that I must solely concentrate on one activity and can’t think of anything else. So r.e.f.r.e.s.h.i.n.g.
Personal Life
I live in Northern New Jersey and work in New York City (fun commute for sure!). I lived in Manhattan for five years where I met the love of my life. Two years later we got married and decided that it was time for us to move out of our 600 square foot apartment and move to the burbs to get a bigger space, which is roughly 900 square feet – definitely an upgrade!
My husband is not a vegan and cooking together in the kitchen can get interesting! I love sharing these daily stories on my Instagram. You will find quite a few helpful tips on my blog as well on how to live and navigate the life when you live with a family or a partner who are not vegan.
